The Massif des Maures is a remnant of the Paleozoic basement, of sandstone type, composed of granites (igneous), gneiss, and schists (metamorphic).

From Hyères to the outskirts of Fréjus, passing through Saint-Tropez, the Massif des Maures forms a series of hills and small mountains with gentle curves, covered with maquis (shrubland vegetation) and forests (pine trees, cork oaks, chestnut trees, etc.).

This property extends over nearly 170 hectares, divided into several plots, with land use consisting of a multitude of agricultural plots, vineyards, and classified wooded areas (maquis).

This property has always hosted various agricultural activities due to its east-facing exposure to the sea. It rises to 100 meters in altitude, allowing it to be caressed by the sea breeze and to admire, from its summit, the entrance to the Gulf of Saint-Tropez and the bay of Pampelonne beach.

Climate

The Mediterranean climate of the Saint-Tropez peninsula offers abundant sunshine, warm and stable temperatures, as well as seasonal rainfall, promoting the optimal ripening of grapes while reducing the risks of moisture-related diseases. The day-night temperature variations preserve acidity and contribute to concentrated flavors, creating an environment conducive to the production of high-quality grapes for winemaking.

Grapes

We cultivate Syrah, Grenache, and Rolle. Syrah produces wines with complex aromas ranging from dark fruits (blackcurrant, blackberry) to spices (black pepper, licorice), along with notes of violet and leather. Grenache adds fruity aromas and softness to Syrah.

Maritime influence

Given that the Saint-Tropez peninsula is surrounded by the Mediterranean Sea, the maritime influence plays a role in the characteristics of the soils and vineyards. The soils reflect marine elements and have saline nuances, which are found in the wines.

Nighttime and hand harvesting

Hand harvesting

During hand harvesting, workers can carefully select ripe and healthy grapes while avoiding damaged ones. This ensures better quality grapes, which is crucial for the production of premium wines.

Additionally, hand harvesting is gentler, reducing the risk of crushing the grapes, thereby preserving their quality and flavors.

Cooler temperature

Nighttime temperatures are generally cooler than during the day, which is beneficial for the quality of the grapes. Grapes harvested at lower temperatures better retain their freshness, aromas, and flavors.

Preservation of grape characteristics

Grapes harvested during the night tend to retain their acidity and aromatic compounds more effectively. This can contribute to the production of more balanced and aromatic wines.

Less early fermentation

Grapes harvested at cooler temperatures ferment more slowly than those picked during the warm hours of the day. This gives winemakers more control over the fermentation process and allows for the development of more complex flavor profiles.
